Huang Zhen pointed out to me on IRC that I should be building
with gnutls 1.1, which does indeed solve the problem.

I will add that as a build dependancy and post my proposed Debian build
updates here shortly. At this stage I think they are all in the debian/
directory, which makes things nice and clean as it shouldn't affect
anyone else.
